Ice Cream

I bought a yogurt maker once, and it broke during its warranty period, so, since I already had a reliable way to make yogurt, and since the shop gave me store credit for the full amount I had spent, I decided to get an ice cream maker instead.

Best. Decision. Ever.

Here’s my basic vegan ice cream recipe, along with some variations. (I occasionally add a new variation when I decide to experiment.)

  • 1 can evaporated coconut milk
  • 1 can condensed coconut milk
  • 1 tsp vanilla
  • 1/2 tsp salt

Flavors:

Creamsicle:

1/2 to 1 tsp orange flavoring, depending on your taste.

Peanut Butter Banana:

  • 1/2 cup peanut butter
  • 1 banana

Peanut Butter Almond:

  • 1 cup peanut butter
  • 1 tsp almond flavoring

Lemon Orange:

  • 1/2 tsp orange flavoring
  • 1/2 tsp lemon flavoring

Mint:

  • 1 tsp peppermint flavoring
  • Optional: crumbled dry mint leaves or fresh crushed mint leaves

Put all ingredients in a bowl (a large Pyrex measuring bowl is better, as you’ll have to pour the mixture out) and combine all ingredients thoroughly. Start your ice cream maker and pour the mixture in. How long it takes depends on your specific machine, so keep an eye on it.

Any of these flavors make an excellent milkshake. Put some of the ice cream in a blender, add a little soy milk, and hit frappe!
